Frontier Hominy
- 3 large onions, chopped
- 1 large green pepper, chopped
- 5 Tbsp. margarine, divided
- 1 lb. ground beef
- 1 (29 oz.) can hominy, drained
- 1/4 tsp. chili powder
- 1 (8 oz.) can tomato sauce
- 2 Tbsp. all-purpose flour
- 1 c. sweet milk, scalded
- 3/4 c. shredded Cheddar cheese, divided
- Saute onions and pepper in 3 tablespoons margarine.
- Add beef and cook just until pink disappears.
- Add hominy, chili powder and tomato sauce.
- Spoon into a 2-quart casserole.
- Melt 2 tablespoons margarine in a small saucepan.
- Stir in flour, milk and 1/2 cup cheese.
- Cook, stirring constantly, until cheese is melted.
- Pour over meat mixture.
- Sprinkle with remaining cheese and bake at 350u0b0 for about 35 minutes.
- Yield:
- 6 to 8 servings.
