Curried Mahimahi
- 1 tablespoon all-purpose flour
- 1 teaspoon curry powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 4 (4-ounce) mahimahi fillets (about 3/4 inch thick)
- 2 teaspoons vegetable oil
- 1/3 cup hot mango chutney
- 2 tablespoons raisins
- 2 tablespoons flaked sweetened coconut
- 1 tablespoon hot water
- 1/4 cup sliced green onions (about 1)
- Combine first 4 ingredients in a shallow bowl; dredge one side of each fillet in flour mixture. Heat oil in a nonstick skillet over medium-high heat until hot. Add fish, floured side down, and cook 3 minutes on each side or until fish flakes easily when tested with a fork.
- Combine chutney and next 3 ingredients. Serve fish immediately with chutney mixture. Sprinkle each serving with green onions.
