Linguine With Spicy Clam Sauce
- 1 medium red onion
- 2 Tbsp. butter
- 2 Tbsp. olive oil
- 4 garlic cloves, minced or crushed
- 2 Tbsp. flour
- 1 c. chicken broth
- 1 tsp. red pepper
- 1/4 tsp. black pepper
- 1/4 tsp. salt
- 1/2 lb. linguine
- 2 (6 oz.) cans chopped clams, drained
- 1/3 c. grated Parmesan cheese
- Bring a large pot of water to a boil.
- Meanwhile, thinly slice the onion and put aside.
- In a large skillet, melt the butter in the oil over medium heat.
- Add the garlic and onion and saute until the onion is translucent and beginning to brown slightly. Add the flour and cook, stirring, until the flour is no longer visible.
- Add the broth, red pepper flakes, black pepper and salt. Reduce the heat to medium-low and simmer for 5 minutes.
