Red Snapper And Rice Dinner
- 1 (6.25 oz.) pkg. quick-cooking long grain and wild rice mix
- 1 3/4 c. water
- 1/4 c. dry white wine
- 1 (16 oz.) pkg. frozen cut broccoli spears
- 2 carrots, peeled and shredded
- juice and grated zest of 1 lemon
- 1 lb. red snapper fillets
- 1/4 c. chopped parsley
- In a 10 or 12-inch skillet, combine contents of rice and seasoning packets from rice mix, water, wine, broccoli, carrots and half the lemon zest.
- Heat to boiling over high
- heat, stirring often; boil 1 minute.
- Spread evenly in skillet.
- Place snapper in a single layer on top of rice.
- Sprinkle with remaining lemon zest and half the lemon juice.
- Reduce heat to medium-low. Cover and simmer 15 minutes or until snapper flakes easily and rice is tender.
- Sprinkle with remaining lemon juice and parsley.
