Red Snapper And Rice Dinner

  1. In a 10 or 12-inch skillet, combine contents of rice and seasoning packets from rice mix, water, wine, broccoli, carrots and half the lemon zest.
  2. Heat to boiling over high
  3. heat, stirring often; boil 1 minute.
  4. Spread evenly in skillet.
  5. Place snapper in a single layer on top of rice.
  6. Sprinkle with remaining lemon zest and half the lemon juice.
  7. Reduce heat to medium-low. Cover and simmer 15 minutes or until snapper flakes easily and rice is tender.
  8. Sprinkle with remaining lemon juice and parsley.
