Practically Perfect Cookies
- 2 1/2 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 3/4 c. white sugar
- 3/4 c. dark brown sugar, packed
- 1/2 lb. sweet butter, at room temperature
- 1 tsp. vanilla
- 2 large eggs
- 12 oz. chocolate chunks
- 1/2 to 1 c. nuts
- Preheat oven to 375u0b0.
- Mix flour, baking soda and salt in bowl and set aside.
- Use mixer to mix 2 sugars briefly at low speed. Add butter first at low speed, then high; beat until it's pale, light and very fluffy.
- Add vanilla at low speed, then high for few seconds.
- Add eggs at low speed, then high until it looks creamed. Add flour, baking soda and salt, 1/2 cup at a time, at low speed for 1 minute, then high speed for few seconds.
- Scrape bowl down on sides; add chocolate chunks and nuts.
- Mix at low speed approximately 10 seconds.
- Put tablespoon of mix on double thickness ungreased cookie sheet.
- Bake 9 minutes in electric stove, 10 to 11 minutes in gas stove.
