Red Beans And Rice
- 1 bag dried red beans
- 1 pkg. Smokey Hollow beef sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 clove garlic, crushed
- dash of Tabasco
- 1/2 tsp. sugar
- 1 (8 oz.) can tomato sauce
- 1 large can stewed tomato
- salt and pepper to taste
- water
- Soak beans by directions on bag.
- Place beans, onion, bell pepper, garlic, sausage and enough water to fill pot about halfway.
- Cook slowly for three to four hours, stirring often. Add remaining ingredients and cook until beans are tender.
- You may need to add water as necessary to keep beans from sticking. After beans have become tender, let the water cook down to sauce consistency.
- This may be prepared in advance and is better the second day.
- Serve over hot cooked rice.
- Yield:
- 8 servings.
