Gluten-Free Cheerios™ Banana Muffins

  1. To prepare the muffins: Preheat the oven to 400 u0b0F. In a bowl, combine the CheeriosTM, rice and quinoa flour, baking powder, salt, cinnamon and sugar. In a separate bowl, combine the mashed banana, milk, egg and oil. Incorporate the dry ingredients and gently stir with a spatula. Pour the batter into an individually-lined muffin pan, filling each one about 2/3 full. To prepare the topping: In a bowl, combine all the ingredients. Pour a teaspoon of the mix over each muffin. Bake for 20 minutes. Insert a toothpick in the center of each muffin, and if it comes out moist, bake for a few more minutes. Remove from oven and let cool on a cooling rack. Serve, and enjoy!
