Strawberry Pecan Scones
- 2 c. flour
- 1/4 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3 Tbsp. margarine, chilled and cut small
- 1 (8 oz.) vanilla low-fat yogurt
- vegetable cooking spray
- 1/4 c. no-sugar strawberry spread
- 2 Tbsp. finely chopped walnuts
- Combine flour, sugar, baking powder, soda and salt.
- Cut in margarine until mixture resembles coarse meal.
- Add yogurt, stirring until ingredients are moistened (dough will be sticky). Turn dough onto floured surface, knead 4 to 5 times.
- Pat dough into 8 inch circle on a baking sheet coated with cooking spray. Cut dough into 12 wedges, cutting to but not through; make slit in each wedge.
- Place 1 teaspoon strawberry spread on top of each slit; sprinkle with nuts.
- Bake at 400u0b0 for 13 minutes.
