Sloppy Joe Fundido
- 3/4 pound lean ground beef
- 1/2 pound ground pork sausage
- 1/2 small white onion, chopped
- 1/2 medium-size green bell pepper, chopped
- 1 (8-oz.) can tomato sauce
- 1/3 cup ketchup
- 1/4 cup water
- 3 tablespoons light brown sugar
- 2 tablespoons all-purpose flour
- 1 1/2 tablespoons apple cider vinegar
- 1 tablespoon yellow mustard
- 2 teaspoons chili powder
- 2 teaspoons Worcestershire sauce
- 3/4 teaspoon kosher salt
- 1 (5-oz.) can diced green chiles
- 4 ounces Oaxaca cheese, shredded (about 1 cup)
- 2 1/2 ounces Monterey Jack cheese, shredded (about 2/3 cup)
- Large corn chips (such as Fritos Scoops!)
- Preheat broiler with oven rack 8 inches from heat.
- Cook beef, sausage, onion, and bell pepper in a medium skillet over medium-high, stirring constantly to crumble, until beef and sausage are cooked through and lightly browned, about 10 minutes. Drain mixture, and return to skillet.
- Stir together tomato sauce, ketchup, water, brown sugar, flour, vinegar, mustard, chili powder, Worcestershire sauce, and salt in a medium bowl. Pour over beef mixture, and stir to combine. Cover and reduce heat to medium-low. Simmer, stirring occasionally, 20 minutes. Stir in green chiles.
- Transfer mixture to a 2-quart baking dish or cast-iron skillet. Top evenly with cheeses. Broil in preheated oven until cheese is golden and bubbly, 3 to 5 minutes. Serve with corn chips.
