Microwave Chicken Cacciatore
- 2 Tbsp. butter or margarine
- 1 medium onion, sliced in rings
- 1 medium garlic clove, minced
- 1 tsp. dried leaf oregano
- 1 (32 oz.) jar spaghetti sauce
- 3 lb. chicken breasts (skinless and boneless)
- cooked spaghetti
- Parmesan or Romano cheese, grated
- In a 12 x 7-inch or 9 x 13-inch baking dish, combine butter or margarine, onion, garlic and oregano.
- Cover with vented plastic wrap; microwave at full power (High) for 5 minutes, or until onion is tender.
- Turn chicken pieces over in the butter mixture to coat.
- Arrange chicken with thicker side towards outside of dish. Spoon spaghetti sauce over chicken, coating completely.
- Cover with vented plastic wrap; microwave at High for 12 minutes.
- Turn chicken up.
- Spoon sauce over; re-cover with wrap and microwave at High 12 to 14 additional minutes, or until tender.
- Let stand, covered, for 5 minutes.
- Serve over spaghetti; sprinkle with Parmesan or Romano grated cheese.
- Serves 3 to 4.
