Fajita Pitas
- 4 whole wheat pita bread rounds
- 1 (16-ounce) can refried beans
- 4 skinned and boned chicken breast halves, cut into strips
- 1 tablespoon fajita seasoning
- 3 tablespoons vegetable oil
- 1 large onion, cut into strips
- 1 large red bell pepper, cut into strips
- 1 (8-ounce) container sour cream
- 1 cup (4 ounces) shredded Cheddar
- 1 tomato, diced
- 2 cups shredded lettuce
- Cut bread rounds in half; spread 1/4 cup beans in each half. Wrap in aluminum foil.
- Bake at 350u0b0 for 10 minutes.
- Toss chicken with fajita seasoning. Saute in hot oil in a skillet over medium-high heat 5 minutes. Add onion and bell pepper; saute 3 minutes or until chicken is done. Spoon into pitas. Top evenly with remaining ingredients.
