Pasta Fagioli

  1. In a large soup pot, heat the olive oil over medium high heat.
  2. Add the sausage, onion and garlic and cook for 5 to 6 minutes or until no pink remains in the sausage, stirring frequently to break up the meat.
  3. Add the remaining ingredients and bring to a boil; simmer for twenty minutes.
  4. Add the ditalini and simmer an additional ten minutes, stirring frequently to keep the pasta from sticking to the bottom of the pot.
  5. Best if made a day ahead so the flavors meld.
