Peanut Butter Sauce For Chicken Or Pork
- oil
- 1 small onion, chopped
- 2 garlic cloves, crushed, or 1/4 tsp. garlic powder
- 3 pinches cumin
- 1 can double strength chicken broth
- 1 c. milk
- 1/2 c. bread crumbs
- 2 to 3 Tbsp. peanut butter
- 4 shakes turmeric
- salt and pepper to taste
- 2 to 3 boneless chicken breasts, cut into 1 to 2-inch chunks (may use pork loin)
- long grain rice
- 2 large potatoes, cut into 1 1/2-inch chunks
- Cook onion, garlic and cumin over low heat until cooked and soft.
- Add chicken broth and 1/2 cup milk.
- Moisten bread crumbs in remaining milk; let sit for 5 minutes.
- Stir into onion mixture.
- Add peanut butter, turmeric, salt and pepper.
- Cook and stir until sauce is smooth and thick.
