Butter Fruit Cake
- 1/2 lb. margarine
- 2 c. flour
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 5 eggs
- 1 1/2 c. sugar
- 1 c. white raisins
- 1/4 lb. green candied cherries, chopped
- 1/2 lb. candied pineapple
- 1/4 lb. red candied cherries
- 1 c. pecans, chopped
- 1/2 tsp. vanilla
- Cream margarine, flour, baking powder and salt.
- Beat eggs and add sugar; mix well.
- Add this mixture to the margarine and flour and mix well.
- Add chopped fruits, nuts and raisins; mix.
- Add vanilla.
- Pour into a greased and floured tube pan.
- (If tube pan is not available, use loaf pan.)
- Bake at 275u0b0 for about 2 hours. Invert pan to cool.
- To remove, run spatula around edges, including tube.
