Carol'S Zucchini Relish
- 12 c. grated zucchini
- 2 c. each: red and green bell peppers, chopped finely
- 4 c. onions, chopped finely
- 1/3 c. pickling salt
- 1 tsp. curry powder
- 1 Tbsp. cornstarch
- 1 tsp. turmeric powder
- 1 tsp. celery seed
- 1/2 tsp. pepper
- 4 1/2 c. sugar
- 3 c. white vinegar
- 2 lb. green beans or enough to pack in 4 (1 pt.) jars, washed and trimmed to same length
- 1 tsp. cayenne pepper
- 4 cloves garlic
- 4 heads fresh dill
- 2 1/2 c. water
- 2 1/2 c. vinegar (white)
- 1/4 c. pickling salt
- 1/4 tsp. cayenne pepper
- 1 clove garlic
- 1 head dill
- Combine in kettle: water, vinegar and salt.
- Heat to boiling. Pour over beans and seal.
- Process in boiling water bath for 10 minutes.
- Will be ready for eating in 2 weeks.
