Orange-Raisin Cake
- 1 c. sugar
- 1/2 c. shortening
- 1 egg, beaten
- 2 c. flour
- 1 c. sour milk
- 1 tsp. soda
- 1 large or 2 small oranges
- 1 c. raisins
- confectioners sugar
- Cream the sugar and shortening well.
- Stir in beaten egg.
- Add alternately the flour and the sour milk into which soda has been mixed, with the flour.
- Grind oranges, rind and all, with raisins. Set aside 3 tablespoons and add the remaining to cake batter.
- Bake in a 10 x 10 x 2-inch square pan for 35 to 40 minutes in moderate oven at 350u0b0.
- Add confectioners sugar to the 3 tablespoons orange and raisin mixture.
- Mix and pour over cake while it is still very hot.
- It makes a delicious frosting.
- The mixture may be added to 7-Minute Frosting if the cake is baked in layers.
