Howard'S Tomato Sauce
- 2 tablespoons olive oil
- 3 cups vertically sliced onion
- 1 cup chopped green bell pepper
- 2 garlic cloves, minced
- 1 cup water
- 1 cup dry red wine
- 1/2 cup chopped fresh parsley
- 1 tablespoon red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon cumin seeds, crushed
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon freshly ground black pepper
- 1 (28-ounce) can whole tomatoes, undrained and coarsely chopped
- Heat oil in a large Dutch oven over medium heat. Add onion, bell pepper, and garlic; saute 7 minutes or until tender. Stir in water and remaining ingredients, and bring to a boil. Reduce heat, and simmer, uncovered, until reduced to about 6 cups (about 1 1/2 hours).
