Orange-Ginger-Chicken Slaw
- 1 (10-ounce) package angel hair slaw (about 6 cups)
- 1 (9-ounce) package frozen cooked chopped chicken breast, thawed
- 1 cup matchstick-cut carrots
- 3/4 cup orange juice
- 1/4 cup low-sodium soy sauce
- 2 tablespoons honey
- 2 teaspoons grated peeled fresh ginger or 2 teaspoons ground ginger
- 1 1/2 teaspoons sesame oil
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon salt
- 6 tablespoons honey-roasted peanuts, coarsely chopped
- Combine first 3 ingredients in a large bowl.
- Combine orange juice and next 6 ingredients in a small bowl, stirring with a whisk. Add orange juice mixture to slaw mixture; toss gently. Spoon salad into individual shallow bowls. Sprinkle evenly with peanuts.
