Corn Bread You Will Like
- 2 1/2 c. yellow cornmeal
- 1/2 c. flour
- 2 tsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 c. milk
- 6 oz. shredded Cheddar cheese
- 1 (8 3/4 oz.) can cream-style corn
- 1/4 lb. bacon (about 7 slices), cooked crisp and crumbled
- 1/2 c. bacon drippings
- 1/2 c. seeded and finely chopped jalapeno peppers for peppy bread or chopped green peppers
- 1/2 c. finely chopped onions
- 3 slightly beaten eggs
- 1/4 c. drained pimientos
- 1 clove garlic, minced
- In large mixing bowl, mix cornmeal, flour, sugar, baking powder and salt.
- In another bowl combine the remaining ingredients.
- Add all this to cornmeal mixture.
- Pour into greased baking pan (13 x 9-inch).
- Bake at 425u0b0 about 30 or 35 minutes.
- Serve warm.
