Spinach Quesadillas
- 1/4 c. chopped cilantro
- 1 c. chopped onion
- 2 Tbsp. chopped garlic
- 1 Tbsp. olive oil
- salt and pepper to taste
- 10 oz. pkg. frozen spinach, thawed, or 2 bunches fresh, cleaned and blanched
- 1 c. shredded Monterey Jack cheese
- 8 to 10 flour tortillas
- butter for grilling tortillas
- Saute cilantro, onion and garlic in oil.
- Season with salt and pepper.
- Add spinach and cheese; heat until cheese is melted. Spoon 2 tablespoons of mixture onto flat of tortilla.
- Distribute evenly onto half of tortilla and fold in half.
- Repeat with remaining tortillas.
- Heat butter in medium skillet over medium heat.
- Grill filled tortillas on each side until brown.
- Serve immediately.
- Serves 8 to 10.
