Spinach Quesadillas

  1. Saute cilantro, onion and garlic in oil.
  2. Season with salt and pepper.
  3. Add spinach and cheese; heat until cheese is melted. Spoon 2 tablespoons of mixture onto flat of tortilla.
  4. Distribute evenly onto half of tortilla and fold in half.
  5. Repeat with remaining tortillas.
  6. Heat butter in medium skillet over medium heat.
  7. Grill filled tortillas on each side until brown.
  8. Serve immediately.
  9. Serves 8 to 10.
