Crinkle Sunflower Cookies
- 1 c. butter
- 1 c. granulated sugar
- 1 c. brown sugar, packed
- 2 eggs, slightly beaten
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- 2 c. uncooked oatmeal
- 1 c. shredded coconut (optional)
- 1 c. salted, roasted sunflower seeds
- Cream butter and sugar together until light and fluffy.
- Beat in eggs and vanilla.
- Sift together flour, soda, salt and baking powder.
- Add to creamed mixture, blending well.
- Stir in oats, coconut and sunflower seeds.
- Chill dough.
- Shape into 1-inch balls.
- Place 2 1/2 inches apart on lightly greased cookie sheet. Bake at 350u0b0 for 10 minutes.
- Cool on racks. Makes 3 dozen cookies.
