Sponge Drops
- 3 large island eggs
- 1 c. sugar
- 1 capful vanilla extract
- 1 c. + 2 Tbsp. cake flour
- 1/2 tsp. cream of tartar
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- vegetable shortening spray
- Cool Whip (8 oz.)
- Sift flour, tartar, baking powder and baking soda well.
- Using electric mixer, beat eggs at top speed for 5 minutes.
- Add sugar a little at a time, then a capful of vanilla extract.
- Now add flour mixture a little at a time.
- Spray pans with vegetable shortening.
- Spoon mixture onto cookie sheets by 1/2 teaspoon drops.
- Bake at 350u0b0 until edges are light brown.
- Remove from pan immediately onto paper dusted with powdered sugar.
- Sprinkle with powdered sugar when cool.
- Sort by size and make sandwiches with Cool Whip filling.
