Corn Dog Bites
- 1 c. plain flour
- 2/3 c. cornmeal
- 1 Tbsp. sugar
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 2 Tbsp. bacon drippings
- 1 egg, beaten
- 1 to 1 1/4 c. buttermilk
- 1/2 tsp. baking soda
- 1 lb. franks
- Mix
- together
- flour, cornmeal, sugar, baking powder and salt. Add bacon drippings and egg.
- Stir soda into buttermilk. Add
- to first mixture for medium consistency.
- Cut franks into 3/4tnch pieces.
- Insert
- toothpicktnto frank pieces.
- Heat skillet, containing 2 inches of cooking oil, to medium temperature.tip each frank piece into bread mixture, then into oil, holding
- by toothpick.teep fry until lightly brown.
- Dip out with
- spatula onto paper towel to drain.tay serve with toothpicks
- left
- in bites
- or
- may
- remove.
- Serve
- with a mustard relish.
- Yields approximately 60.
