Chicken In Red Wine(Low-Fat Version)
- 3 lb. skinned chicken parts
- 12 whole small mushrooms
- 1 c. dry red wine
- 1 packet instant chicken-flavored broth mix
- 1/4 tsp. pepper
- 2 cloves garlic, minced
- 12 small white pearl onions, peeled
- 1 Tbsp. plus 1 tsp. vegetable oil
- 1/2 c. water
- 1/2 tsp. paprika
- 1/2 tsp. dried thyme
- 1 small bay leaf
- 1 Tbsp. dried parsley flakes
- Preheat oven to 350u0b0.
- Place chicken in an ovenproof casserole.
- Top with onions and mushrooms.
- In a small bowl, combine remaining ingredients.
- Pour over chicken.
- Cover and bake 1 hour.
- Remove and discard bay leaf before serving.
- Each serving:
- 261 calories, 10 grams fat.
- Makes 4 servings.
