Instant Pot Carrot Halwa

  1. Select SAUTE setting on a 6-quart programmable pressure multicooker (such as Instant Pot). (Times, instructions, and settings may vary according to cooker brand or model.) Select HIGH temperature setting, and allow to preheat. Add ghee to cooker, and heat until melted and fragrant. Add cardamom, cinnamon, and mace; cook, stirring constantly, until fragrant, about 15 seconds. Stir in carrots and raisins; cook, stirring often, until just beginning to soften, about 6 minutes. Stir in almond milk. Cover cooker with lid, and lock in place. Turn steam release handle to SEALING position.
  2. Select MANUAL setting on HIGH pressure for 7 minutes. (It will take 5 to 15 minutes for cooker to come up to pressure before cooking begins.)
  3. Carefully turn steam release handle to VENTING position, and let steam fully escape (float valve will drop). (This will take 5 to 15 minutes.) Remove lid from cooker.
  4. Select SAUTE setting on MEDIUM temperature setting. Add condensed milk, almond meal, brown sugar, and salt. Cook mixture, gently breaking up carrots with a wooden spoon, until liquid is mostly absorbed, 5 to 7 minutes.
