Broccoli, Ham And Rice Au Gratin
- 1 Tbsp. butter
- 1 medium onion, chopped
- 1 (11 oz.) can Cheddar cheese soup
- 1/2 tsp. garlic powder
- 6 oz. roll sharp processed cheese, sliced
- 8 oz. can sliced mushrooms
- 10 oz. pkg. frozen broccoli, chopped
- 3 c. cooked rice
- 2 c. cooked ham, diced
- 2 oz. jar diced pimentos
- 1 can onion rings
- Melt the butter in a Dutch oven and saute the onion until tender.
- Add the soup, garlic powder and cheese.
- Stir until cheese has melted.
- Drain the mushrooms and the broccoli and add to the mixture along with the rice and the cooked, diced ham.
- Drain the pimentos and gently stir in the mixture.
- Spoon into a lightly greased baking dish.
- Cover and chill for 8 hours to let the flavors blend.
- When ready to bake, remove from refrigerator for 30 minutes.
- Cover and bake at 350u0b0 for 40 minutes.
- Remove cover and scatter crumbled onion rings on top.
- Return to oven and bake for 5 to 8 minutes more.
- Serves 6 to 8.
