Apple Pie Filling
- 4 1/2 c. sugar
- 1 c. cornstarch
- 2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 3 Tbsp. lemon juice
- 2 or 3 drops yellow food coloring
- 5 1/2 lb. tart apples, peeled and sliced
- 1 tsp. salt
- 10 c. water
- Put first 4 ingredients in large saucepan.
- Add 1 teaspoon salt.
- Stir in 10 cups water and cook and stir until thick and bubbly.
- Add lemon juice and food coloring.
- Pack apples into hot jars, leaving 1-inch headspace.
- Add hot syrup to 1/2-inch from top.
- Use spatula to help distribute syrup.
- Adjust lids.
- Process in boiling water bath (pints for 15 minutes and quarts for 20 minutes).
- Use 1 quart apple filling in pie crust.
- Add top crust. Cut slits (so steam can escape) and seal edges.
- Bake in a 400u0b0 oven for 50 minutes.
- Makes 6 quarts.
