Apple Pie Filling

  1. Put first 4 ingredients in large saucepan.
  2. Add 1 teaspoon salt.
  3. Stir in 10 cups water and cook and stir until thick and bubbly.
  4. Add lemon juice and food coloring.
  5. Pack apples into hot jars, leaving 1-inch headspace.
  6. Add hot syrup to 1/2-inch from top.
  7. Use spatula to help distribute syrup.
  8. Adjust lids.
  9. Process in boiling water bath (pints for 15 minutes and quarts for 20 minutes).
  10. Use 1 quart apple filling in pie crust.
  11. Add top crust. Cut slits (so steam can escape) and seal edges.
  12. Bake in a 400u0b0 oven for 50 minutes.
  13. Makes 6 quarts.
