Gluten-Free Apple And Cheerios™ Banana Muffins
- TO PREPARE THE MUFFINS:
- 1/2 cup Apple Cinnamon CheeriosTM cereal, ground
- 1 cup quinoa flour
- 1/2 cup potato starch
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 cup coconut oil
- 1/2 cup light brown sugar
- 1 egg
- 1/2 cup mashed banana
- 1/2 cup green apple, finely diced
- TO PREPARE THE TOPPING:
- 1/4 cup light brown sugar
- 1/2 teaspoon cinnamon
- 1 pinch grated nutmeg
- To prepare the muffins: Preheat the oven to 350 u0b0F. In a container, combine the ground CheeriosTM with the quinoa flour, potato starch, cinnamon, baking powder, baking soda and salt. In a separate container, combine the coconut oil and sugar. Add the egg and mashed banana. Add the apples and incorporate to the CheeriosTM mix. Pour the batter into the individually-lined muffin pan. To prepare the topping: Combine all the ingredients and drizzle about 1/2 teaspoon of the mix over each muffin. Bake for 30 minutes or until muffins are golden brown. Serve and enjoy!
