Hearty Sausage And Vegetable Pot(A Hearty One-Dish Dinner)
- 2 slices bacon, coarsely diced
- 2 c. diced onion
- 2 stalks celery, chopped
- 1 1/2 to 2 lb. smoked beef sausage, cut into 3/4-inch thick slices
- 4 c. water
- 1/4 c. chopped fresh parsley
- 1/2 tsp. black peppercorns, crushed
- 1/4 tsp. salt
- 4 to 5 medium carrots, coarsely sliced
- 2 medium parsnips, peeled and coarsely sliced
- 1 large turnip, peeled and coarsely cubed
- 4 to 5 medium boiling potatoes, peeled and cut into eighths
- 1 small head cabbage, cored and cut into 5 or 6 wedges
- salt and pepper
- parsley
- Brown bacon in 4-quart saucepan.
- Add onion and celery and cook several minutes.
- Stir in sausage, water, parsley, peppercorns and salt.
- Simmer for 30 minutes.
- Add carrots, parsnips, rutabaga and potatoes.
- Cover and simmer 20 minutes.
- Arrange cabbage wedges over top, cover and cook until cabbage is tender, about 15 minutes. Lightly season cabbage with salt and pepper.
- Sprinkle top with minced fresh parsley.
- Serve immediately.
