Bean Soup(Easy And Good)
- 1/2 c. chopped onion
- 2 cloves garlic, minced
- 1 Tbsp. oil
- 1 medium tomato, chopped
- 2 (14 1/2 oz.) cans ready-to-serve chicken broth or 1 qt. frozen broth
- 1 c. elbow macaroni, uncooked
- 1/4 tsp. pepper
- 1 3/4 c. water
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. celery flakes or fresh celery
- 3 (16 oz.) cans Great Northern beans, rinsed and drained
- Cook onion and garlic in Dutch oven in oil over medium heat, stirring constantly.
- Add tomato.
- Simmer 5 minutes, stirring occasionally.
- Add broth, water, basil, oregano and celery.
- Boil. Then reduce heat and simmer uncovered for 5 minutes.
- Add beans, macaroni and pepper.
- Boil, cover, reduce heat and simmer 15 minutes or until macaroni is tender.
- Stir.
- Serve sprinkled with Parmesan cheese.
