Quick Pasta Skillet
- Cooking spray
- 1 teaspoon olive oil
- 1 (8-ounce) package pre-sliced mushrooms
- 1 cup chopped yellow onion
- 3/4 cup chopped green bell pepper
- 1 teaspoon dried basil leaves
- 1/4 teaspoon salt
- 2 garlic cloves, minced
- 1 (14-ounce) jar pizza sauce
- 4 cups hot cooked penne (about 2 cups uncooked tube-shaped pasta)
- 1 1/2 cups (6 ounces) shredded part-skim mozzarella cheese
- Preheat broiler.
- Heat olive oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add mushrooms; saute 4 minutes. Add onion and next 4 ingredients; saute 8 minutes or until vegetables are crisp-tender.
- Add pizza sauce and pasta; cook 2 minutes, stirring constantly or until thoroughly heated and pasta is evenly coated with sauce. Remove from heat, and top with cheese.
- Wrap handle of pan with foil; broil 1 minute or until cheese melts.
