Chicken Kiev With Mushrooms

  1. Bone chicken breasts and cut in half down center.
  2. Flatten each fillet by pounding gently with cleaver.
  3. Be very careful not to break the fillet.
  4. Next, place a 1-inch slice of chilled butter (2 inches long) in the center of each fillet.
  5. Sprinkle with salt, pepper and the minced mushrooms and minced parsley.
  6. Roll up and tuck in the ends so that butter is well enclosed.
  7. Dip the rolled chicken fillets into a beaten egg and roll in bread crumbs.
  8. Fry in oil and butter for 5 minutes browning it on all sides.
  9. Garnish with lemon slices.
