Chicken Kiev With Mushrooms
- 4 chicken breasts, skinned
- 1 lb. cold butter
- 1 Tbsp. minced parsley
- 2 eggs, beaten
- 4 Tbsp. mushrooms, minced
- 1 c. bread crumbs
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 lemon
- 1/2 c. oil
- 1/4 lb. butter
- Bone chicken breasts and cut in half down center.
- Flatten each fillet by pounding gently with cleaver.
- Be very careful not to break the fillet.
- Next, place a 1-inch slice of chilled butter (2 inches long) in the center of each fillet.
- Sprinkle with salt, pepper and the minced mushrooms and minced parsley.
- Roll up and tuck in the ends so that butter is well enclosed.
- Dip the rolled chicken fillets into a beaten egg and roll in bread crumbs.
- Fry in oil and butter for 5 minutes browning it on all sides.
- Garnish with lemon slices.
