Mango Chutney
- 5 c. half ripe mangoes, peeled and chopped
- 1 clove garlic, minced
- 3/4 c. preserved ginger, minced
- 1/2 c. chopped onion
- 4 c. brown sugar
- 1 1/2 c. raisins
- 1 tsp. salt
- 2 chili peppers, finely chopped
- 2 c. cider vinegar
- 1 tsp. each: cloves, allspice and nutmeg
- 1 tsp. oregano
- 1 tsp. basil
- 1/4 tsp. black pepper
- 1/4 tsp. Accent (MSG)
- 1 1/2 tsp. salt
- 1 clove garlic, split
- Into a Tupperware container, put 4 (4 ounce) cans button mushrooms and 2 large cans artichoke hearts (drained and quartered). Shake ingredients in Good Seasons bottle and pour over mushrooms and artichoke hearts. Seal well and place in refrigerator. Turn over each day. Good after 3 days; fantastic after 6 or 7 days.
