Southern Grits Casserole
- 2 1/2 c. water
- 1 c. quick cooking grits, uncooked
- 3 Tbsp. butter or margarine
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 eggs, beaten
- 1 1/2 c. shredded Cheddar cheese, divided
- Microwave the
- water
- on
- High until boiling in a 1 1/2 quart casserole
- or
- usethe conventional range to boil.
- Add grits, butter, salt and pepper to the water.
- Cover with waxed paper. Microwave
- at
- High
- 5
- minutes, stirring twice.
- Stir some of the hot grits into the beaten eggs.
- Stir in 1 cup of cheese and add egg-cheese mixture to grits.
- Stir well to mix. Microwave on
- High 5tinutes.
- Rotate
- dish 1/2 turn after 2 minutes.
- Sprinkle the
- reserved
- 1/2tup
- cheese
- on top of mixture.
- Cover. Microwave
- on High 2 minutes or until cheese melts.
- Let
- stand
- 3 to 4 minutes before serving.
- Serve hot. Yield:
- 6 to 8 servings.
