Southern Grits Casserole

  1. Microwave the
  2. water
  3. on
  4. High until boiling in a 1 1/2 quart casserole
  5. or
  6. usethe conventional range to boil.
  7. Add grits, butter, salt and pepper to the water.
  8. Cover with waxed paper. Microwave
  9. at
  10. High
  11. 5
  12. minutes, stirring twice.
  13. Stir some of the hot grits into the beaten eggs.
  14. Stir in 1 cup of cheese and add egg-cheese mixture to grits.
  15. Stir well to mix. Microwave on
  16. High 5tinutes.
  17. Rotate
  18. dish 1/2 turn after 2 minutes.
  19. Sprinkle the
  20. reserved
  21. 1/2tup
  22. cheese
  23. on top of mixture.
  24. Cover. Microwave
  25. on High 2 minutes or until cheese melts.
  26. Let
  27. stand
  28. 3 to 4 minutes before serving.
  29. Serve hot. Yield:
  30. 6 to 8 servings.
