Cuban Pork Chops
- 2 teaspoons ground cumin
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 2 (4-ounce) boneless center-cut pork loin chops (about 1/2 inch thick)
- Cooking spray
- 1 banana, diagonally cut into 1/4-inch-thick slices
- 1 large garlic clove, minced
- 2 teaspoons grated lime rind
- 1 tablespoon fresh lime juice (about 1/2 lime)
- Combine first 4 ingredients; rub spice mixture evenly over both sides of pork.
- Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add pork, and cook 3 minutes on each side or until done. Transfer pork to a plate, and keep warm.
- Coat pan with cooking spray; add banana and garlic, and saute 1 minute. Stir in lime rind and juice; cook 30 seconds.
- Place pork chops on plates; spoon banana mixture over pork.
