Olive-Basil Relish
- 2 plum tomatoes, seeded and finely diced
- 1/2 cup finely diced yellow bell pepper
- 1/4 cup pitted kalamata olives, finely diced
- 1/4 cup pitted green olives, finely diced
- 1/4 cup finely diced red onion
- 2 tablespoons drained small capers
- 1 tablespoon MCCORMICK Gourmet Collection Basil Leaves
- 1 garlic clove, minced
- 1/4 cup extra virgin olive oil
- 2 teaspoons DOMINO Granulated Sugar
- 1 teaspoon red wine vinegar
- Salt and MCCORMICK Gourmet Collection Coarse Grind Black Pepper to taste
- Stir together first 8 ingredients in a large bowl.
- Whisk together olive oil, sugar, and vinegar until blended. Pour over tomato mixture in bowl, and toss to coat. Cover and let stand at room temperature 1 hour. Season with salt and pepper to taste.
