Black Bean And Chicken Salad
- 2 tablespoons lemon juice
- 2 tablespoons white balsamic vinegar
- 1 clove garlic, minced
- 1/8 teaspoon salt
- 1/4 cup extra-virgin olive oil
- 1 15-oz. can black beans, drained and rinsed
- 1 8 3/4-oz. can whole-kernel corn, drained
- 1 pint grape tomatoes, halved
- 8 cups mixed greens
- 4 cups shredded skinless meat from 1 rotisserie chicken
- 1/4 cup scallions, white and light green parts, thinly sliced
- Whisk together lemon juice, vinegar, garlic, salt and olive oil. In a large bowl, combine beans, corn and tomatoes; toss with 2 Tbsp. of vinaigrette.
- Divide greens among 4 plates. Top with chicken, bean mixture and scallions. Drizzle with remaining vinaigrette.
