Orange Glazed Chicken

  1. Whisk together orange juice, chicken broth, soy sauce, cornstarch, sugar, hot mustard and red pepper flakes in a small mixing bowl.
  2. Set aside.
  3. In a medium skillet heat oil.
  4. Cook chicken until done and remove from heat.
  5. Set aside.
  6. Reduce heat and add celery; cook 1 minute.
  7. Add squash, zucchini and 2 tablespoons water.took until softened, about 5 minutes.
  8. Add red peppers and cooked chicken.
  9. Then add sauce and allow to simmer on low heat until sauce is thickened and bubbly.
  10. Serve over rice if desired.
