Fresh Spinach Salad
- 2/3 c. salad oil
- 1/4 c. wine vinegar with garlic
- 2 Tbsp. dry white wine
- 2 tsp. soy sauce
- 1 tsp. sugar
- 1 tsp. dry mustard
- 1 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- dash of Tabasco
- 2 or 3 c. fresh spinach
- 5 slices bacon
- 2 hard-cooked eggs
- Combine first 9 ingredients in a jar and shake vigorously. Set aside until ready to use.
- Wash and pat dry spinach; tear into bite sized pieces and place in refrigerator to keep crisp.
- Fry bacon, drain, let cool and then crumble.
- Chop hard-cooked eggs. Combine bacon and eggs.
- Arrange the spinach in a large salad bowl.
- Pour dressing over spinach leaves and tip with crumbled bacon and chopped eggs.
- Serves 4 to 6 people.
