Microwave Noodle Casserole
- 8 oz. noodles
- 1 lb. ground beef
- 2 (8 oz.) cans tomato sauce
- 1/4 c. chopped green pepper
- 1 c. sour cream
- 1 (8 oz.) cottage cheese
- 1 (8 oz.) softened cream cheese
- salt and pepper
- 1/4 c. chopped green onion
- In
- 4
- quart
- casserole,
- cook
- noodles in 2 1/2 quarts boiling water; drain.
- Cook beef in microwave about 4 minutes, stirring
- once
- or twice.
- Drain excess fat. Add tomato sauce, salt
- and
- pepper;
- cook
- 5
- minutes
- by
- microwave.
- Combine cheeses
- with onion and green pepper.
- In casserole layer half the noodles,
- all
- cheese mixture and remaining noodles, then all meat sauce.
- Cover with plastic wrap and cook by microwave 15 minutes.
- Makes 6 servings.
