Fruit Pizza Platters
- 1 pkg. yellow cake mix
- 1/4 c. water
- 2 eggs, at room temperature
- 1/4 c. butter
- 1/4 c. brown sugar, packed
- 1/2 c. chopped pecans
- 8 oz. cream cheese
- 1 large Cool Whip
- 2 pt. strawberries
- 1 can pineapple rings, cut into wedges
- 1 large bunch seedless grapes
- 2 large bananas, peeled and sliced
- Preheat oven to 350u0b0.
- Grease and flour two 12-inch pizza pans. Combine 1/2 cake mix (dry), water, eggs, butter and brown sugar in a mixing bowl; mix thoroughly.
- Blend in remaining cake mix.
- Fold in nuts.
- Divide batter evenly between the prepared pans.
- Bake for 12 minutes.
- After pizzas have cooled, spread Cool Whip and cream cheese mixture on both.
- Arrange fruits in circular pattern over topping.
- Start with the strawberries on outer edge, then pineapple wedges, grapes, banana slices and end with a reserved whole strawberry in the center.
- Brush with the Apricot Glaze and refrigerate until serving.
