Taco Salad(Serves 6)
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1/2 c. chopped green bell pepper
- 1 pkg. taco seasoning mix
- 1 (16 oz.) can refried beans
- 1 (16 oz.) can tomatoes, drained and cut up
- 6 c. torn lettuce
- 2 large tomatoes, coarsely chopped
- 1 large avocado, peeled and chopped
- 1 c. Cheddar cheese, shredded
- In large skillet, brown ground beef, onion and green pepper over medium heat; drain.
- Stir in taco seasoning, refried beans and canned tomatoes; simmer for 15 minutes.
- In large bowl, combine lettuce, tomatoes and avocado; toss.
- Place lettuce mixture on individual serving plates.
- Top with meat mixture; sprinkle with cheese.
- Garnish with a dollop of sour cream and a tablespoon of sliced green onions, if desired.
- Serve with corn chips.
