Taco Salad(Serves 6)

  1. In large skillet, brown ground beef, onion and green pepper over medium heat; drain.
  2. Stir in taco seasoning, refried beans and canned tomatoes; simmer for 15 minutes.
  3. In large bowl, combine lettuce, tomatoes and avocado; toss.
  4. Place lettuce mixture on individual serving plates.
  5. Top with meat mixture; sprinkle with cheese.
  6. Garnish with a dollop of sour cream and a tablespoon of sliced green onions, if desired.
  7. Serve with corn chips.
