Chef Tell'S Spinach Stuffed Pork Chops

  1. In an all-purpose casserole, combine spinach and water; cover. Place on Micro-Go-Round in microwave oven.
  2. Microwave at High for 5 to 6 minutes, breaking up spinach frequently.
  3. Drain spinach; remove from casserole.
  4. Place 2 tablespoons butter in casserole. Microwave uncovered at High for 30 seconds, or until butter melts. Add anchovies; microwave at High for 1 minute.
  5. Stir in spinach, salt and pepper.
  6. Microwave at High for 2 or 2 1/2 minutes or until heated through.
  7. Remove spinach mixture from casserole; set aside.
