Chef Tell'S Spinach Stuffed Pork Chops
- 1 (10 oz.) pkg. frozen chopped spinach
- 1/4 c. water
- 2 Tbsp. butter or margarine
- 2 anchovies, chopped
- salt
- pepper
- 1/2 c. chopped onion
- 1/2 c. sliced fresh mushrooms
- 1 tsp. Dijon mustard
- 1/4 c. red wine
- 1/4 c. chicken stock
- 2 pork loin chops, with pocket (about 3/4-inch thick)
- salt
- flour
- 1 Tbsp. butter or margarine
- In an all-purpose casserole, combine spinach and water; cover. Place on Micro-Go-Round in microwave oven.
- Microwave at High for 5 to 6 minutes, breaking up spinach frequently.
- Drain spinach; remove from casserole.
- Place 2 tablespoons butter in casserole. Microwave uncovered at High for 30 seconds, or until butter melts. Add anchovies; microwave at High for 1 minute.
- Stir in spinach, salt and pepper.
- Microwave at High for 2 or 2 1/2 minutes or until heated through.
- Remove spinach mixture from casserole; set aside.
