Zucchini Tarts
- 3 cups chopped zucchini
- 1 large onion, chopped
- 1 4-oz. can mushroom stems and pieces, drained
- 1/2 cup Mozzarella cheese
- 2 Tbsp. butter
- 8 individual tart shells
- Pinch of salt
- Pinch of garlic powder
- Pinch of pepper
- Pinch of sugar
- 1 6-oz. pkg. cream cheese
- 1/4 cup milk
- 1 egg
- 1/2 tsp. salt
- Cracked pepper
- Saute zucchini, onion and mushrooms in butter for about 5 minutes.
- Add pinches of seasonings. Cool.
- In bowl, beat cream cheese, milk, salt and egg until well mixed. Add a little cracked pepper. Combine sauteed vegetables into cream cheese mixture. Cook tart shells as directed (they come frozen, 8 to a package). Cool.
- Just before serving, fill tart shells. Sprinkle with Mozzarella cheese and bake at 375u0b0 to 400u0b0 for 20 minutes.
