Apple Cake
- 1 c. butter
- 2 c. sugar
- 3 eggs
- 3 c. sifted flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 2 tsp. vanilla extract
- 3 c. peeled, chopped apples
- 2 c. chopped walnuts
- Combine butter and sugar in a large mixing bowl.
- Cream until smooth.
- Add eggs, one at a time.
- Beat well.
- Sift together the flour, baking soda, salt and spices.
- Add to creamed mixture.
- Stir in vanilla.
- Add chopped apples and nuts (batter will be very stiff).
- Spread batter evenly in a Bundt pan.
- (If using a Teflon coated Bundt pan, spray lightly with vegetable spray.)
- Bake at 325u0b0 for 1 hour (or until top of cake is golden brown and springs back when touched lightly).
