Chocolate Mint Cookies
- 3/4 c. margarine
- 2 Tbsp. water
- 1 1/2 c. dark brown sugar
- 2 c. semi-sweet chocolate pieces
- 2 eggs
- 2 1/2 c. flour
- 1 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1 lb. Andes mints
- Cook butter, sugar and water until butter is melted.
- Add chocolate pieces; stir until melted.
- Pour into large mixing bowl; let stand 10 minutes.
- Beat in eggs, one at a time.
- Add dry ingredients.
- Chill dough 1 hour for easier handling.
- Preheat oven to 350u0b0.
- Line cookie sheet with foil.
- Roll a teaspoon of dough into a ball.
- Place 2 inches apart on cookie sheet.
- Bake for 12 to 13 minutes.
- Remove from oven and immediately place a mint on each cookie.
- Allow to soften, then swirl!
- Makes approximately 60 cookies.
