Lobster Roll

• 1/4 pound cooked lobster meat, roughly chopped, from about a 1-lb. lobster (1/2 cup cooked meat)
• 1 scallion (light green and white parts only), chopped (1 Tbsp.)
• 1 teaspoon mayonnaise
• 1/2 teaspoon freshly squeezed lemon juice
• 1/4 teaspoon salt
• 1 hot dog bun
• 1 teaspoon unsalted butter, softened
• Pinch of paprika (less than 1/8 tsp.)

1. In a medium mixing bowl, combine the lobster meat, scallion, mayonnaise, lemon juice, and salt. Fold gently to combine.
2. Heat a small skillet over medium heat. Trim 1/8 inch from the rounded top of the hot dog bun to make a flat side. Toast the bottom and top (cut surface) of the hot dog bun for 1 minute on each side. Spread the butter evenly on the inside of the bun. Fill with lobster salad. Sprinkle with paprika, and serve.
