Cabbage Patch Stew(Lo-Cal)
- 1 lb. lean ground beef
- 1/2 tsp. garlic powder
- 2 carrots, sliced thin
- 1/4 c. instant mashed potato flakes
- 2 c. water
- 3 Tbsp. chopped fresh parsley
- 1 large onion, sliced
- 7 c. cabbage chunks
- 1/2 tsp. thyme
- 1 bay leaf
- 2 c. tomato juice
- salt and pepper to taste
- Brown beef with onion.
- Drain and rinse with hot water.
- Add garlic powder, cabbage, carrots, bay leaf, thyme, 1 cup of the water and 1 cup of the tomato juice.
- Cook about 10 minutes.
- Stir in the remaining water and juice.
- Bring to a boil and simmer until the vegetables are tender-crisp.
- Stir in the parsley and potato flakes.
- Remove bay leaf.
- Has 280 calories and 4 grams of fat.
