Cheesy Mashed Potatoes

  1. In a Dutch oven, add water to unpeeled potatoes just to cover. Sprinkle with salt.
  2. Bring to boiling; reduce heat.
  3. Cover and simmer for 30 to 35 minutes or until almost tender; drain.
  4. Cool slightly; peel and shred potatoes with a grater.
  5. In a large mixing bowl, combine potatoes, cheese and butter; stir until butter melts completely.
  6. Stir in sour cream, green onion, 1/2 teaspoon of salt and the pepper.
  7. Transfer to a greased 2-quart casserole.
  8. Bake, uncovered, in a 325u0b0 oven for 45 to 50 minutes or until heated through.
  9. Before serving, sprinkle with paprika.
