Pork Chops With Orange-Olive Relish
- 1 cup fresh orange juice (about 2 1/2 oranges)
- 1/2 cup dry white wine
- 1/4 cup fresh lime juice (about 2 limes)
- 1 tablespoon ground cumin
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoons minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground red pepper
- 6 (4-ounce) boneless center-cut loin pork chops (1 1/2 inches thick), trimmed
- Cooking spray
- Orange-Olive Relish
- Combine first 9 ingredients in a large zip-top plastic bag. Add pork to bag; seal. Marinate in refrigerator 8 hours, turning bag occasionally. Discard marinade.
- Prepare grill.
- Remove pork from bag.
- Place pork on grill rack coated with cooking spray; cover and grill 10 minutes on each side or until pork is no longer pink. Serve with Orange-Olive Relish.
